Pasta is one occasional dish that we keep for week night dinner. It could that boring monday night dinner or end up little fancy cheesy on a friday eve dinner. I’m not a big fan of Pasta dishes but GT & Sid can handle if made little cheesy. Making pasta is no big deal…its just like cooking noodles… pick the one which you like, there are quite a few to try, from healthy whole grain to regular. it comes in cute shapes and sizes too. When it comes to sauce, there is this basic tomato base or classic white. Today, I will be sharing the basic white sauce for any cooked pasta,  which of cource, is bland without much seasoning, which I’m going to leave it to your choice. I will be giving few option to try,choose the one which best suits your needs. Toss in the cooked pasta in sauce, add in sauteid veggies and seasoning of your choice.

 Ingredients
 All Purpose flour / Maida  2 Tablespoons
 Unsalted Butter  2 Tablespoons
 Salt  1/4 teaspoon
 Black Pepper Powder (coarsely ground)  1/4 teaspoon
 Half & Half (which nothing but half cream & half milk)  1 cup

Melt the butter in a small saucepan over low heat. Whisk flour salt and black pepper in a bowl and keep it aside. Stir in the flour mixture in the butter  and cook, stirring constantly with the whisk. The paste will start to turn thick and bubbles a bit… don’t let it burn, cook over low heat.

While this roux is cooking, bring half and half to a simmer in a second sauce pan. When it about to start boiling immediately remove the hot half and half from the heat and slowly add it to the roux in a steady stream, constantly whisking to blend it to a smooth consistency. Bring this to one boil and simmer for 2-3 minutes and switch off. Remove from heat. Use immediately or refrigerate. Now your basic white sauce is ready, add your seasoning and toss in the cooked pasta!

Types of seasoning that you can add and play with..

1. To make it garlicky- use 1/4 teaspoon of garlic powder.

2. To make it more spicy – add few Red Pepper flakes.

3. To make it more cheesy – use about 1/4 cup grated Parmesan cheese or Cheddar cheese.

 

Notes:

So… what is Half & Half?? – Here in USA we get something called half and half which is nothing but half cream and half milk in mixed form.

You can substitute with whole fat milk or 2% or skimmed depending on your preference. OR simple combine 1/2 cup cream with 1/2 cup milk.

    I prefer white sauce to tomato sauce always…I add milk instead of cream to make it lighter…Looks great:)
