Bittergourd & egg fry

Paavakkai & muttai curry...it's really a tasty curry.

Bittermelon & Egg curry/Fry

Ingredients
2 no

Bittergourd(cut into thin slices)

1

Onion medium ( chopped finely)

½

Tomato (chopped)

1 no

Green chili(chopped)

6 no

Curry leaves

1 no

Egg

½ tsp

Mustard and urad

½ tsp

Aniseeds(sombu)

½ tsp

Chili powder

¼ tsp

Turmeric powder

4 stks

Cilantro for garnishing

4 tsp

Oil

Salt(as per taste)

Instructions

Cut the bittergourd into thin round slices. Chop the onion, tomato and g. chilli.

Heat 1 tsp oil in kadai. Add mustard & urad, allow to splutter. Then add aniseeds, g.chili and curry leaves, fry for 1 minute. When you get aroma add onion & fry till it changes to pale brown. Now add tomato, bittergourd, turmeric powder and salt. Fry till the tomato becomes soft. Add 1tsp oil and close with lid. Keep in medium heat, let it to cook for sometime(8 to 10 minutes). Mix the curry occasionally. When the bittergourd cooked once, add chilli powder & 2 tsp oil. Fry till the curry turns to dark brown and roast. If you don't want to add egg remove from the heat and garnish with cilantro.

If you want to add egg : When the curry turns to dark brown, break the egg and add in the curry, keep the heat in medium high. Mix the curry with egg. Fry till the egg mixes with curry. Switch off and garnish with cilantro.

Serve with white rice,sambar rice, rasam or curd rice.

Notes

Egg is purely optional.
