Re fried Beans is a type of mashed beans, a staple of Mexican cuisine. Raw Pinto or Black beans are soaked overnight, cooked, mashed and fried with fat and seasoned. Mostly Pinto beans are used for this recipe which makes a great snacking dip for Nachos, stuffing for tacos and burritos, stuffing for chunky enchiladas or a simple accompaniment for Mexican style rice. Curd rice can be eaten with pickles only. It tastes good with mango pickle.
In a pan, heat ghee and oil and then season mustard, urad dhal, channa dhal, dry chillies, asafoteda and grated coconut, curry leaves and ground nuts. Cook rice with less water and cool it. Put ghee, salt and the fried mixture and serve hot.
