Tomato Soup


Simple home-style Tomato soup made with few humble ingredients from your kitchen. Serve up a a big bowl of this hearty , warming soup with some toasted bread to complete a satisfying meal.

Ripe Tomato 3 count (Large)
Onion 1 count (medium)
Garlic 3 cloves
Black peppercorn 1 tsp (Freshly ground or crushed)
Salt 1 tsp (or to taste)
Butter 1 tbsp
Sugar 1 pinch
Water 1 cups
Fresh cream 1 tsp (optional)



Choose fresh ripe juicy tomatoes on vine for this recipe.  We need to blanch the tomatoes first to start with. Boil water in a pot deep enough to cover the tomato.   Drop the tomatoes in water and boil for cope of minutes or until the skin starts to peel back.  You may place them in cold water for a minute and then remove the skin off.  Reserve the blanched tomatoes.

In a pan heat the butter and saute the chopped onions along with garlic until they turn translucent. Now add the blanched tomatoes and saute for another minute or so and switch off. Let this mixture cool a bit.

In a blender add this sauteed mixture along with some water, salt and sugar. Blend well to bring it to creamy texture. Serve topped with freshly ground black pepper and some cream. Serve with soup sticks or toasted bread on the side.

Note: Some blenders cannot handle grinding hot liquids , so let cool completely before grinding. Just warm it up in microwave before serving.  Adding cream is purely optional but takes it up one notch.  Adding Butter and fresh ground pepper definitely makes a difference so stick on to it. Yield about 2  cups of soup serving  2-3 adults.
