|1 lb||Penne rigate [ i have used ronzoni healthy harvest , whole wheat pasta]|
|1 lb||Chicken sausages [ cooked ]|
|3 T||Olive oil|
|1 no||Onion [ thinly sliced ]|
|3 no||Garlic [ chopped ]|
|1 cup||Chicken stock|
|1 can||Tomato sauce [ 8 oz ]|
|1 cup||Grated parmesan cheese|
|3 slice||Swiss cheese [ any cheese of your choice can be used ]|
|Salt [ to taste ]|
|1 cup||Mixed vegtables [ i have used mushroom and brocolli stems ]|
Heat a non-stick pan, add olive oil to it. Add the chopped garlic , onion and saute for 3mins , now add the sausages , pepper powder and saute for 5-6 mins till the sausages are tender and well mixed with onion and garlic. Now add the vegetables and saute ro 2 mins , then add the chicken stock and let it comes to a boil and all the vegetables are cooked.
when the sauce bubbles , add the pasta and 1/2 of parmesan cheese , parsely and stir. preheat the broiler on high. Transfer the pasta mixture to a broiler safe bowl. Now add the remaining parmesan cheese . cover on top with thin slices of swiss cheese. keep it under the broiler for 2-3 mins till the cheese melts and forms a light brown crust.
1. Cheese can be any of your choice . I have used two kinds , grated parmesan and sliced swiss cheese.
2. If you do not have sausages you can used cooked and shredded chicken . 3.While buying sausages from the store , check for the ingredients , most of the sausages contain beef and pork to it.
4.If u do not have seperate broiler dish , you can use the microwave safe bowl and put the pasta in the microwave for 3mns , you will get a nice cheese crust.
