Fried rice is the most easy dish to make with leftover rice and few everyday pantry ingredients. Today’s lunch box menu is nothing fancy….. just a simple vegetable fried rice made with few colorful veggies which is really good hot or cold making it perfect for kids lunch box. You can add cooked chicken or scrambled eggs if you like but in my opinion veggie style looks a lot appealing for school lunches.

|Cooked Basmati Rice||2 cups|
|Mixed Vegetables||3/4 cup (Carrots, Beans, Cabbage)|
|Garlic||1/4 teaspoon (minced)|
|Ginger||1/4 teaspoon (minced)|
|White vinegar||2 drops|
|White pepper powder||1/4 teaspoon|
|Salt||1/2 teaspoon ( plus a little more)|
|Spring onions||2 teaspoon for garnish|
Make sure your cooked rice is cooled completely before you proceed. Heat oil in a tawa, add all the veggies along with vinegar, sugar, salt and pepper powder. Toss at high flame for few minutes and then add the cooked rice and give a gentle mix. Switch off and garnish with chopped spring onions.
- Always look for lunch boxes with tiny compartments with lids . Plastic is not safe so try to stick with glass or stainless steel tiffin boxes or atleast safe microwavable lunch boxes / BPO free. Pack the rice in one big compartment and ketchup/sauce on one with lid that way they don’t get mixed.
- Pack some fruits which your kids love, I packed strawberries of Siddharth!
- Do not pack the rice while its super hot, this will release water and make the dish very soggy. Let the fried rice warm a little bit before you pack it.
- This recipe does not include soy sauce, you may add a few drops if your kids like that taste. It may turn the rice slightly brownish in color.
