Indian Style Chinese Fried Rice


I have been wanting to do fried rice for quite sometime. The last time i tried, the rice turned out really mushy and tasted a bit like Veg. Pulav :)

So i started collecting information from various food blogs and came up with the fried rice below, which was a sure winner !!

2 cup Basmati rice
1 cup Carrot chopped finely
1 cup Beans chopped finely
1½ cup Red and grreen capsicum chopped finely
2 cup Spring onion chopped fienely
1 cup Cabbage chopped finely
2 tbsp Onions bulbs from the spring onions chopped finely
1 tbsp Garlic chopped finely
1 tbsp White vinegar
1 pinch Ajinomoto
1 tsp Ketchep
1 tsp Soya sauce
1 tbsp Sesame oil
Salt and fresh pepper to taste


Cook the rice with enough water. Make sure it is not over cooked and mushy. Let it cool(as experts say refrigerated rice works good too).Take a big wok and add some oil. Fry the garlic and the onions till transparent and then add the carrots followed by the beans. Add a dash of salt and freshly ground pepper and a Tbsp of water. The vegetables will cook fast as they are finely chopped. They should be cooked and also crunchy. Remove from fire. In the same wok add some more oil and fry the capsicum, followed by cabbage and half of the spring onions with a dash of salt and pepper. Remove from fire.

In the same wok heat the sesame oil(this oil gives the lovely flavour) and add the rice and mix it with a fork on medium heat till get warm. Now start adding the fried vegetables and mix thoroughly. Add in the ajinomoto, ketchep, soya sauce and vinegar and mix again. Check for salt and pepper and adjust accordingly.

Remove from fire and serve hot with anything you please
