Kale greens are highly nutritious vegetable relating to the wild cabbage family. Fresh kale leaves when sauteed and seasoned in our Indian style taste similar to that of Murungai keerai (Drumstick leaves). They also blend well with few veggie combination and Potato stands number one among them. This subzi is all about potato pairing with greens and stir-fried.

2 medium sized Onions |
1 inch piece Ginger |
1 tbsp White sesame seeds |
1/4 Coconut (scraped) |
1 tbsp Tamarind pulp |
1/2 tsp Garam masala powder |
Salt to taste |
4 cloves Garlic |
Fresh coriander leaves a few sprigs |
1 tbsp Coriander seeds |
3-4 Red chillies whole |

2 medium sized Tomatoes Punjabi style potato subzi combined with fresh fenugreek leaves. Dum Aloo is a North Indian dish. Potatoes cooked in curd with spices . ALOO BONDAMake potato curry like you make for Poori masala, but dry. (Cook potatoes and mash them. Then season with cumin seeds, ginger pieces, green chillies, curry leaves and add the potatoes and put turmeric powder and salt and fry until it becomes dry – for poori masala you need to add onions and make it watery by adding water. Vindaloo is a spicy, sweet and sour goan curry. This East Indian dish, actually brought by the Portuguese to India. Meat cooked in thick onion gravy with a blend of spices. |
