Description
Fast food style spicy chicken fillet sandwich.

| 1 no | Chicken breast (boneless) |
| 1 tbsp | Hot sauce (store bought, anybrand is fine) |
| ¼ tsp | Salt |
| 1 dash | Onion powder |
| 1 dash | Garlic powder |
| 1 dash | Black and red pepper blend (mc cormick brand) |
| ¼ cup | Buttermilk |

| 2 pinch | Salt |
| ¼ tsp | Mc cormick black and red pepper blend |
| ¼ tsp | Red chili powder |
| Ingredients-3 | |

| 1 cup | Panko bread crumbs |
| 1 no | Egg |
| 2 cup | Oil (for deep frying) |
| 4 nos | Hamburger buns |
| 4 slice | Tomato |
| 4 slice | Onion |
| 4 nos | Lettuce leaf |
| 4 tsp | Mayonnaise |
Instructions
Wash chicken breast in cold water and place it in between two plastic wrap and pound gently using a rolling pin. We need to flatten the fillet to make it thin. Cut the flat fillet into 4 equal portions. Marinate the fillets with all the ingredients from Table -1. (Hot sauce + salt + onion powder + garlic powder + black and red pepper blend + buttermilk). Let this rest covered for atleast 1/2 hour.
Now heat oil in a kadai and keep it ready for deep frying. Meanwhile take 3 separate wide dish and set in this order.
1. In the first dish mix all purpose flour, salt, red chili powder and Mc Cormick black and red pepper blend.
2. In the second dish, lightly beat an egg and keep it ready.
3. In the third dish spread the Panko bread crumbs.
When the oil is heated to desired temperature, take each fillet and follow these steps.
a. Place them in the flour mixture (dish 1) and coat well on all sides.
b. Dip this coated fillet in egg wash. (dish 2)
c. Place this egg wash coated fillet in bread crumbs (dish 3) and coat on all sides.
d. Gently put them in oil and cover with lid, fry for 30 seconds on each side over meduim high flame.(Kadai usually doesn't come with lids, use something which is heat resistant to cover the oil. This actually cooks the chicken thoroughly and gives nice crust with soft meat inside). Now remove lid and fry for another minute to make them golden brown on all sides.
e. Drain the excess fat by placing them over a paper towel.
Assembling (This recipe makes 4 sandwiches)
In a frying pan, lightly toast the hamburger buns and remove. Place the flat portion of the bun on the bottom, line them with lettuce, onion, tomato and chicken fillet. Coat the inner sides of the top portion bun with mayyonaise and place it over. Serve them with choice of salad and fries.
Notes
Panko — Japanese style bread crumbs availble in most supermarkets in the Internation asile. All Asian stores have them too. Substitue with regular bread crumbs.
Mc Cormick — Black and red pepper blend is available in all supermarkets, check the spice and seasoning asile. Substitute with fresh ground black pepper. Same brand has garlic and onion powder.
Hot sauce — Any brand is fine.

Have you tried vege burger. Make a bit thin & big dahi cutlets… serve with other stuffings too… Or you can fry dahi cutlets like carrot urundai. So it will be crispy… I tried both ways…
Hi Mullai, Good one and i love this burger. Next time try with iceberg lettuce. It will be more crunchy and even more colorful than the usual lettuce. Just a suggestion. Can you please share the recipe how to make French fries using oven. Thanks in advance.VIJI
