Ingredients

1/2tsp Turmeric powder
1/2tspRed Chili powder
1/2tspSalt
4tspGreen Chutney
4tspRed Chutney Spicy chilli sauce or Ketchup works
4tspOnionminced
1sliceCheese

1/4cupGrated paneer / Grated white cheese
4tspMayonnaise

Instructions
Steam Potato
Fill inner pot of pressure cooker or Instant pot with water.
Place potato in the steamer basket.
Put the lid on cook for 2 whistles if using a traditional pressure cooker or pressure cook over high pressure for 10 minutes using an Instant Pot.
Cut into halves, peel off the skin and set aside the cooked potato.
Potato Masala
Take cooked potato in a bowl, add turmeric powder, red chili powder and salt.
Mix and mash well with a fork and set this aside.
Sandwich assembly
Spread butter on either sides of the bread.
Spread green chutney on one and spicy garlic or ketchup on the other.
Place some potato masala and spread on top of it.
Sprinkle finely chopped onion.
Place a slice or cheese over it. Alternately you also use grated cheese or paneer for more thick rich filling.
Place the other bread on top and toast.
Toasting
Place the assembled sandwich over a pan and press it down gently to toast over medium heat for 5 minutes on each side or until it turns golden & crispy!
Alternately you may choose to grill over sandwich press or use an Air Fryer.
Pre heat air fryer to 400F for 3 minutes. Toast for a total of 6 minutes, flipping once after first 3 minutes.
Serve warm with choice of chutney or enjoy it with tomato sauce or ketchup!
