Watermelon Rind Halwa - milk based dessert made using watermelon rind.

Ingredients
2cupsWatermelon rind grated
2cupsMilk (make sure its hot)
0.75cupSugar
3tbspGhee
1/4tspCardamom powder
10eachCashew nut
1pinchYellow food coloroptional
Instructions
Remove the pink watermelon flesh from the rind. Using a peeler, remove the thick green skin on top and discard. Grate the white flesh using a grater and keep it aside.
Heat 2 tablespoons of ghee in a pan, fry the cashews till golden. When done remove just the cashews and add the grated rinds to the ghee and fry them in the ghee.
The grated peel will have some water content initially and that will evaporate as it gets cooked. Cook over medium flame for 10 minutes stirring continuously.
Now add hot milk to this and cook further for another 10 stirring continuously. (adding cold milk to warm rind may curdle the milk)
Once the milk reduces 75% add sugar, cardamom powder, food color and stir continuously for 10 minutes.
Keep stirring the halwa mixture at regular intervals, you may also have to scrape the sides of the pan and the bottom as well to avoid milk solids sticking to the bottom of the pan.
Simmer until the halwa thickens. Finally add in 1 tablespoon of ghee and fried cashews to finish.
Serve warm!

This halwa stays good for up to a week when refrigerated. You may warm it up lightly before serving.This halwa can be made simple by skipping the milk part of the recipe.To reduce cooking time, you may choose to use Khoya or milk powder.If using sweetened condensed, skip regular milk and sugar.
