Instant Pot Vegetable Brinji Rice

Seeraga Samba Rice
soaked for 45 minutes

Instructions
Soak Samba rice for 45 minutes.
Under SAUTE MODE heat oil and season with brinji leaves, cumin and fennel seeds.
Add in chopped onion, green chilli, garlic, ginger, mint leaves and assorted veggies. Saute until the onion turns transparent.
Add in garam masala powder and salt. Saute for few minutes.
Add in soaked rice, coconut milk and water to it.
Cancel SAUTE MODE. Put the lid on and seal the pressure valve.
Switch to manual PRESSURE COOK MODE
Cook over HIGH PRESSURE for 5 minutes.
Let the pressure release naturally.
In a separate pan, heat ghee toast cashews and bread until golden. Lightly saute the capsicum.
Add this to the cooked rice along with spring onions or coriander leaves.
Add in little extra ghee and gently mix.
Vegetable Brinji is all ready to be served.
