No matter how much or what kind made at home, we all drool over a scoop of that Hotel Chutney. There's been a request for this item for a long time under our site, Yeah that's for white chutney.. which will be making its way soon, meanwhile enjoy this red version of hotel chutney. This chutney looks orangish red and mostly served with idli or dosai. Raw version of this chutney is served with bhajis and bondas.

Ever since I tried the "My Dhaba" (Punjabi style restaurant, Radhakrishnan Salai, Chennai) biryani, my craving started more for Sindhi style foods. Usually their style biryani is kind of strong flavoured, pale greenish.. due to herbs and spices and moreover inclusion of sour yogurt makes them slightly pungent. Here is my attempt in matching one of their mint chicken style biryani.

Idli Milagai Podi has many versions and this one is my favourite which I learnt from family friends who are from Elenchi (Kutralam / Cutrallam side), a small town in Thirunelveli district. Most of their podi preparations include whole black gram (with skin), black sesame seeds , or combination of lentils which give a unique smoky flavour. Here is a simple version of one of their style which would sure tingle your tongue-tations.

Snake Gourd is called Podale in Konkani. Mostly this vegetable is stir-fried like poriyal or used with dal to make kootu varieties. But to my surprise.. one Goan restaurant served them as appetizer in a buffet and that's how I got the idea for this recipe. Well.. those were deep fried with semolina and stuffed with meat. You must have probably had a shot of these if you've already tried any of those Mangalorean style buffets.

How about Camouflaging the beets ??? Here is an interesting one which I found this week "Golden Beets", these are born as beetroots with golden orange skin and light yellow flesh with sweet, delicate and mild flavour of beetroot and some of carrots too. After cooking they look like cabbage stir-fry… but with all the benefits of beetroot.

Dosai with Bottle gourd ?? sounds crazy isn't it? Well, its rich in fibre, low in saturated fat and cholesterol! these are the 3 things which pave way to good health and weight loss. Then, why not include in all possible ways. Though we normally use this in curries and gravies… including in dosai was pretty daunting to me. But my aunt from whom I learned this recipe guaranteed good results and it did.

Gosh! My inbox is full today !
