Refried Beans

Description

Re fried Beans is a type of mashed beans, a staple of Mexican cuisine. Raw Pinto or Black beans are soaked overnight, cooked, mashed and fried with fat and seasoned. Mostly Pinto beans are used for this recipe which makes a great snacking dip for Nachos, stuffing for tacos and burritos, stuffing for chunky enchiladas or a simple accompaniment for Mexican style rice. Here comes the recipe for my Taco cradle.
Ingredients
1 cup Pinto beans
¼ tsp Onion powder
¼ tsp Garlic powder
2 tsp Taco sauce
¾ tsp Salt
2 tsp Vegetable oil
¼ cup Cheddar cheese
2 cup Water

Instructions

Dried Pinto Beans ~~~~~ Soaked Pinto Beans

Soak dried Pinto beans overnight in water. Next morning wash them in cold water and drain completely. Pressure cook the beans with 2 cups water and salt for up to 6 whistles. When the steam releases, open and mash them along with onion powder, garlic powder and taco sauce. Add oil and cheese, simmer until it turns to thick mass. If its too dry, trying mixing little fat or stock to bring it to creamy consistency. Serve this with toppings of choice along with tortilla chips.

Substitute

Onion powder ~~~ Finely minced onions (1 tsp)

Garlic Powder ~~~ Finely minced  fresh garlic ( 2 cloves)

Taco Sauce ~~~~ Red chili powder (1/4 tsp)

If using fresh onions and garlic, pressure cook them along with the beans.

Suggested toppings (diced onions, tomatoes, velveeta cheese, chopped spring onions, minced cilantro)

Makes about 1 1/2 cups cooked beans.
