Idli Podi / இட்லிப் பொடி is one life saver…no matter you how many variety of side dishes you make for your family …they still ask for milagai podi putting all the other sambar, chutney to shame! 😛 I’ve shared a few idli milagai podi varieties already… this one is my favorite as it was given to me by my best friend Menaga Sathia, who has this beautiful bog Sashiga Kitchen full of mouth watering recipes. Her simple homestyle cooking just makes me so hungry when she post on Insta and this one is such Insta inspired recipes… all credit goes to her 🙂
Some Idli podi recipes to try…
Dry red chillies 30
Urad dal 1/2 cup
Channa Dal 2 tablespoons
Asafoetida 1/4 teaspoon
Salt 3/4 teaspoon (kallu uppu)
Oil 1/2 teaspoon
Lets see how to make this Idli Podi
Heat 1/4 teaspoon oil first and roast the red chillies for few minutes. Remove and let cool. In the same same heat the other 1/4 teaspoon oil and starting roasting the urad dal and channa dal until nice aroma comes or until hey turn golden brown. Remove from pan and let cool.
First pulse the the chilies along with salt and asafoetida.
Followed by the roasted dal mix. You may grind to fine powder or coarse texture depending on your preference. Not too fine not too coarse is what i like!
Let cool completely and store in an air tight box.
- Makes about 250 grams approx
- You may choose any kind of chilies. I have used half Andhra chilies and 1/2 regular chilies.
