Tomato Pulav

Description

Tomato Pulav is one of the most delicious variety amongst the rice dishes.Everyone of us have a customized version of making this delicious rice dish. This Pulav is an intensely frangrant rice, cooked with a combination of rich tomato gravy, coconut milk and garam masalas.

Ingredients-1
1 cup

Basmathi rice

1 cup

Coconut milk

1 cup

Water

4 nos

Tomatoes(finely chopped)

2 nos

Onions (finely chopped)

3 nos

Green chilli (slit open)

5 nos

Garlic pods

2 inch

Ginger

3 stks

Coriander leaves (for garnishing)

Ingredients-2

Bay leaf

Cloves

2 nos

Cinnamon stick

1 tsp

Chilli powder

1 tsp

Cumin powder

2 tsp

Coriander /dhania powder

¼ tsp

Turmeric powder

1½ tsp

Salt (as per taste)

Ghee

Instructions

1.Wash basmati rice and drain the water completly. Add ghee in a pan and fry the rice for 1-2min.It's always better to fry and use the rice to avoid the rice from getting smashed.

2.Peel and cut the onions length wise,chop the tomatoes to a fine consistency and slit open the chillies.Crush the ginger&garlic to a fine paste using a mixer and keep them aside.

3.Heat 2T of ghee in the cooker.Add bay leaf, cinnamon, cloves, and saute for a while. Add the slit green chillies, ginger garlic paste,chopped onions and tomatoes and fry them for few more minutes.Add turmeric powder,chilli powder,coriander powder,cumin powder and salt and saute on low flame till they turn tender and the raw smell disappears.This might take about 10-15min.

4. Add the basmathi rice with 1 cup of coconut milk and 1cup of water(1:2)ratio and stir the entire contents,check for salt if required at this stage and pressure cook for 2-3 whistles.

5.If using a microwave ,cook on Microwave Medium(600w) for 25minutes with the lid closed.

6.Once the pressure is released ,open the lid ,stir the contents and garnish them with coriander leaves.

Tomato Pulav can be served with Boondhi Raitha or Onion Raitha or as per individual's preference!!!

Notes

1.Kohinoor Basmathi Rice has been used by me in this recipe and this requires no soaking before preparation.It can be fried in ghee and directly pressure cooked.If using other variety of rice pls vary the proportion of water and coconut milk accordingly.

2.People who do not prefer Coconut milk can use water instead but coconut milk acts as one of the major ingredients for the flavour .Readymade coconut milk(Tinned ones )can very well be used for this recipe or can be extracted at home.

3.The number of green chillies and quantity of chilli powder can be altered as per individuals taste.
