This recipe posted here is the slightly Indo-chinese and mostly Americanized version… made with authentic sichuan paste. Indo -Chinese type calls for schezwan sauce or ready made red chili paste. Schezwan rice sold here in restaurants include little bit of bean paste and out of many I choose this “AA brand Sichuan Hot pot paste” which worked quite well for this preparation. Also inorder for the rice to look brownish red choice of soy sauce place a big part, so either use dark soy or Kecap manis. This is an Indonesian soy sauce which is a dark sweet soy syrup with molasses.
You may choose any brand dark soy sauce and schezwan paste or sauce. My pick on those two are shown here…… hunt in your local Chinese stores.

| ½ tsp | Black pepper powder |
| 1 tsp | Kecap manis or dark soy sauce |

| 2 nos | Eggs (slightly beaten with little salt) |
| 4 nos | Chicken tenders |
| 1 pinch | Ajinomoto (optional) |

Instructions
Must have for the recipe: Cold cooked rice, Sweet / dark soy sauce, Schezwan hot pot paste/ Schezwan chili paste or sauce. Chili paste usually comes with enough fat to toss the rice so use oil if if needed.
The ready made Szechuan paste which I have used has everything needed for stir-fry… check it out, so all you need is just the rice, vegetables and meat of your choice. Make it your way vegetarian, eggetarian or non vegetarian. Adjust the spice level by adding right amount of paste.
Cut the veggies about an 1″ size and keep aside. Heat little oil in a wide frying pan, add the sichuan paste with 2 tablespoon of water and melt it. Bring the flame to high and add the chopped veggies, sugar, salt and pepper. Stir-fry over medium heat and add the cooked rice along with soy sauce. Over a high flame stir -fry everything.
If using just eggs, then push the rice to one side of the pan and cook the eggs over on the other side until scrambled well. Mix to combine. If using chicken then, in a separate pan, heat little oil, add the cut chicken tender, add salt and pepper and cook until well done. Then add this to the rice. If you are a pro.. then you can cook all this in a single pan with little gap between each step. If not… better be on the safe side, fully cook each item in a separate pan and then add to the rice.
Do a bit extra garnishing with shredded carrot and lengthwise cut spring onions. Show off!!!! these fancy paper Chinese take out boxes are available in most dollar stores, pack them for a fun Office lunch, Potluck parties, Friday night dinner or whatever !!!
