A great street side food famous in Tamil Nadu and Kerala. Flaky, fluffy, soft circular breads made with plain flour or Maida. First of all, this item literally takes a bath in oil, so people who are health consicous better avoid making this dish. The other thing is , it takes atleast a couple hours to make these parottas, most of which is kneading the dough, beating and shaping. Avocado Paratha

Parathas with Avocado??? quite interesting isn't it?? Recently bought a pack of flavoured tortilla from a speciality store which had one variety with avocado, it was so delicious and that inspired me to try this with our chapatis. This fruit is full of buttery creamy green flesh with plenty of healthy monounsaturated fat. That's a green signal for a good diet and have used it as a substitute in the place of regular fat in our parathas.

Laccha Paratha

Laccha Paratha is a  kind of layered flat bread made with Whole wheat flour (Atta). The term "laccha" means spiral or rings in Punjabi, the  atta dough is stretched, rolled in the form of rings, stuffed with fat and shallow fried, resulting in mutlilayered flaky bread. This is closely related to our South Indian Parotta except the fact that it is purely made with whole wheat. While Plain Laccha paratha / paranthas are just stuffed with ghee/butter/vegetable fat/vanaspathi , the spiced up versions takes many turns. Depending on individual preference they range from stuffed greens, spice powder to minced meat. In my humble recipe, I've stuffed them with fresh mint leaves and dash of garam masala powder.

Focaccia

Focaccia is an Italain soft flat bread topped with veggies and herbs. Baking is not my kind of thing, but surprisingly this one turned out pretty perfect than I expected. Here are few shots from a daring novice baker.

Veggie Swirl Bread

Mashed veggies stuffed in bread, rolled in swirl pattern. Mostly these swirl breads are either stuffed with sweet cinnamon or herb filling. Mine being an exception... with veggie filling, though primary idea was adapted from one such recipes.

Roti Canai

Roti Canai is a popular Malaysian style fried bread similar to our Kerala style Parotta. Flour, eggs, milk and loads of fat mainly ghee or margarine is used to give a flaky texture. The process is similar to our Parotta but with extra ingredients which alters the taste and texture. Another popular version from Singapore is called Roti Prata, similar ingredients and process except for the folding. Roti refers to bread in Malay. Bhature / Bhatura, is a popular punjabi style deep fried bread. Often this bread is served with the combination of chole / channa masala and hence its also known as Chole Bhatura.

Chapati

Chapati or Chapatti,  is a type of Indian flat bread popular among northern parts of India. This is a simple roti made with Whole wheat flour, salt, oil and water. Making them real soft is the tricky part and search engines just overflow with tips. As far as my verdict goes "eat them immediately after making", having them hot off the griddle is the only solution to have them soft.  Ofcourse you can always store, reheat and eat, but they tend to become little chewy.

These are exact measures, so proceed with confidence. Though I'm not a pro in making great chapatis was still able to yield pretty decent ones with this recipe and hope you all would like it.
