Pakoda

| |

Crispy deep fried lentil fritters, a popular street side savoury snack in Tamil Nadu. Colloquial term used for this type is Gharam Pakoda.  (Onion Pakora / Onion Pakodi / Onion Pakoda / Ulli Pakodi / Pakora / Pattanam Pakoda / Sweet Stall Pakoda)

Proportion really matters a lot for this recipe, even an extra drop of water could turn them soft. I've tried my best to explain with right measures and pictures to make it easy for all. Enjoy!!!

Podale Cutlets

| | |

Snake Gourd is called Podale in Konkani. Mostly this vegetable is stir-fried like poriyal or used with dal to make kootu varieties. But to my surprise.. one Goan restaurant served them as appetizer in a buffet and that's how I got the idea for this recipe. Well.. those were deep fried with semolina and stuffed with meat. You must have probably had a shot of these if you've already tried any of those Mangalorean style buffets.

Here in this recipe, I've opted for shallow frying with my own style of potato stuffing and covering with gram flour, use your immagination.. try new stuffing and give it a shot.

Stuffed Snake gourd / Snake gourd Curry / Podhalae / Podale / Podhale / Pudalangai / Potlakaaya / Pathola / Paduvalakaayi / Padavalanga

Zucchini Flower Fritters

| | | | |

Edible flowers anyone?? Quite surprised to see that these were offered for a dollar a pint at my farmers market and coundn't resist buying. Once these were tossed and other well known flowers like cauliflower, broccoli and artichokes were given importance. But things to do change, nowadays these zucchini flowers are gaining more popularity... and considered gourmet due to its medicinal properties. What do you think they have the most??? Rich folic acid, so give it try if you happen to see...

Both male and female zucchini flowers are edible, male flower grows directly from the stem and doesnt bear fruit, but does contribute some effort ...while the female flower is attached with the zucchini fruit itself. Most markets sell them with the fruit atttached but little expensive though. Male flower is good for stuffing and mild in taste compared to female which is quite robust in flavour. These are just like our Banana flower.. except very mild and suits mostlly deep fried, stir fried , stuffing and saute.

I had to resort to deep frying as this is the first time, I'm actually introducing this item to my family.... better not trash the whole thing. But these flowers tasted very mild and that gave me confidence.. for lot more recipe ideas.

White Bean Chicken Chili

| | | |

Small white beans are always considered staple here in USA as they go in most of their food preparations. They are well suited for soups, stews, salads and chunky chili. Baked form is most relished and used as dip for variety for breads. In my home once in a week we have SSS day.. ??? Ok its Soup, Salad and Sandwich day and I always try  to make it hearty to go with a light sandwich. This recipe of mine is close to "Ruby Tuesdays" restaurant chains White chili, give it a try and see if it matches the taste.
