Pudina rice is one of my mother's favorite recipe which can be prepared easily. Since it is colorful kids will like it the most.
Pudina (Mint leaves ) – 1/2 bunch
Coriander leaves – 1/2 bunch
Ginger -1/2 inch
Coconut – 1/2 cup
Green chillies -5-6 (as per the taste)
Cardamom -2 Nos.
Basmati Rice, Ghee, Salt , Cashews , Fennel Seeds.
Wash Pudina, Coriander leaves . Grind it with the other ing 1 to a fine paste.
Heat Ghee in a pan add fennel seeds. Fry till golden brown. Add the grounded paste and stir continuously till the raw smell goes.
Soak basmati rice for 10-15 min and cook it . Add the above paste to the rice with little ghee and salt .
Garnish with cashews .
