Hi all! hope everyone is doing good. I got bored of doing pulao with peas n veggies and so made it with paneer instead. It turned out to be yummy(trust me!). Its also quite different on the menu while hosting dinner parties!

| 3 nos | Green chili (slit open) |
| 4 clove | Garlic (crushed) |

| 3 nos | Cardamon (crushed) |
| 4 nos | Cloves |
| 2 inch | Cinnamon |
| 2 tbsp | Coconut paste |
| 250 g | Paneer( cut lengthwise) |
| Oil ( as per need) | |
| 2 tsp | Butter (can be increased or decreased) |
| 2 nos | Onion (sliced lengthwise) |
| 1 cup | Basmati rice (raw) |
Instructions
Wash and soak basmati rice for 15 minutes in 2 cups of water. saute paneer in a pan until brown for a few seconds and then soak it in hot water( this makes the paneer soft). Coconut paste could be made by grinding 3 heapful tbsp of grated coconut with little water. Heat butter in a pan. Once it darkens, add oil to the pan. When hot, add cinnamon, cardamons, cloves, fennel seeds. Fry until they turn slightly brown. Then add onions, garlic and green chillies.when onions turn slightly brown, add coconut paste, soaked rice along with the water,and salt as per need. Simmer the heat, close the lid and cook until the rice gets done. This should take 10-15 minutes depending on the heat source. drain the paneer with kitchen towel, spread over the rice, close the lid and switch off the heat source. Mix the pulao gently before serving. Adding chopped and roasted cashewnuts is optional. Enjoy with a spicy gravy of ur choice!
