Paneer cooked in rich yogurt based tomato onion gravy. This recipe can be cooked in two ways.. First blanch the onions and cashews together. This can be done by placing them in microwave for 2 mins. Cool them and grind it to a paste along with g.chillies and garlic. Fry the panner in 3tbsp of butter and place them in water to make it soft. Then in the same pan add 4 tbsp butter and fry the ground paste till the raw smell of the onions and garlic goes. Then add the condensed soup and mix it altogether. Add salt accordingly as the soup already has salt. Allow the mixture to come to a boil and simmer it for about 15 mins.
Ridge gourd cooked with split green gram (Moong dal / Pachai Paruppu) to make a semi thick lentil gravy. Tastes good as a side with Meen kuzhambu, Kara kuzhambu or Vatral Kuzhambu varieties or even goes well when mixed with rice with a drizzle of ghee.
