Can you please post of the mutton chaps recipe that is served in chettinad restraunts.

Mutton chap is a mughlai dish ...
the chap is to be made on slow fire and poppy seeds, kewra essence, mace and nutmeg are used instead ....and not curry leaves and all.

my mom used to do mutton

my mom used to do mutton chops as been described by SS

But i wish to say how i finish the chops....
5 spoons of kadala maavu/besan daal
1 egg
salt
water

1)garnish the gravy on the mutton chops
2)mix the besan daal with egg n salt to make a thick paste
3)dip the mutton chops in the paste
4)heat oil in a kadai n fry the mutton chops

i am just giving the receipe of mutton chops which i used to make.

ingredients:

1.mutton chops-8 pcs(preferbly goat)
2.onion-2 finely chopped
3.tomatoes -2 finely chopped
4.turmeric powder-1/2 tsp
5.chilli powder-1tsp
6.salt as reqd
7.oil-4tbsp
8.cloves-4
9.cinnamon sticks-2 small pcs
10.fennel seeds-1 tsp
11.pepper-2tsp
12.cumin-2tsp
13.water
14.lime juice -few drops
15.curry leaves
16.coriander leaves

procedure:

1.Dry roast pepper and cumin. grind them to a fine powder.
2.heat oil in pressure cooker add cloves,cinnamon sticks and fennel seeds .fry them till they chane color.
3.add finely chopped onion and ginger garlic paste.fry them till onion turns golden brown.
4.now add finely chopped tomatoes,turmeric,chilli powder,ground pepper cumin powder and salt.
5.let it cook till the oil seperates.stir it so that it doesnt get burned.
6.add the mutton chops pieces and mix it well with the gravy.
7.now add water(till all the mutton pcs r immersed) and close the pressure cooker.
8.wait for three whistels in high flame.now simmer and wait for one more whistel.since mutton takes sometime to become tender.
9.switch off.after the pressure has released open the cooker.
10.u will see chops in a liquid form.now place the cooker on high flame opened and cook till all the water evaporates and forms a gravy.
11.switch off and add few drops of lime juice.
12.garnish with chopped curry and coriander leaves.

note:

1.if u want it more spicy u can add the prepared pepper cumin powder.
2.for dry dish u can reduce the number of onions and tomatoes
