Hi, Instead of buying in store, you can make the flour in home. Take pacharisi (raw rice) and soak the rice in water for two hours and spread the rice in a cloth and dry it (it should not be totally dried, there should be some 5% wetness) and grind it. Sieve the flour, tie the flour in a cloth and steam it in idly cooker for 15 minutes. After that, sieve the flour again and dry it in the sun for one whole day. This idiyappam flour will last for one year and you will get soft idiyappam, which will be soft for one whole day if you make the dough in a correct way. TIPS: Before making idiyappam, take the required quantity of flour, sieve and then make. » reply

Hi, u have to use idiyappam flour...rice flour won't work....u can get idiyappam flour in any malayale stores. » reply
