A Simple and delicious soup , could be made out of no time !
|2 can||Reduced / sodiumfree chicken broth|
|1 tsp||Grated ginger|
|1 no||Garlic (chopped)|
|1 tsp||Red pepper flakes|
|4 oz||Soba noodles or whole-wheat spaghetti|
|1||Boneless,skinless chicken breast halves,thinly sliced crosswise|
|1 no||Celery stalks,cut into bite size pieces|
|1 cup||Snow peas,sliced into 1/2 inch on the diagonal|
|1 T||Fresh lime juice|
|Salt (as per taste)|
|2 stks||Coriander leaves (chopped for garnishing)|
- In a large saucepan,bring broth,ginger,garlic,red-pepper flakes,and 2 cups of water to boil over high heat.
- Add noodles,lower heat,and simmer until noodles are tender,6 to 8 minutes
- Add chicken[ pre cooked chicken can also be added ],celery stalks ,and snow peas;cook until chicken is opaque throughout,about 1 minute.
- Add lime juice,scallions, parsely and salt to taste.
