Karamani Kara Kuzhambu

Here’s something hearty and healthy for these cold wintry days. Usually or mostly Black eyed peas makes us think of a sundal recipe or quick salad recipe. But they pair well with gravies too. They are real friendly with most common veggies like brinjal, bottlegourd and drumstick. Moreover you don’t have to break your head about pre-soaking overnight, these are softer dried peas and require just about 10 minutes of soaking time. Here’s a light version of kara kuzhambu recipe made with black eyed peas and drumstick which when accompanied by plain rice and appalam will complete a full course meal. Murungai Keerai Poriyal

Few days back, I got lucky to find drumstick leaves at Patel Bros and they were surprisingly fresh. I couldn't resist my hands grabbing a few stalks… here we are not talking bunches as they are extremely expensive. So picked about 6 long stalks which should be sufficient to feed 3 adults. I remember the moment I left the store, after that, my mind was filled with thoughts as to how to prepare these healthy greens. My top pick was preparing it as poriyal which we serve with rice. This keerai is a familiar side for Kezhvaragu Koozh.

Kothu Cauliflower Curry

Kothu Cauliflower is similar to minced meat or kheema except its the veggie version. Finely minced cauliflower florets goes into a thick garam masala making it great side for idli, dosa, chapathi or even as a side for rice.

Vankaya Pakodi Kura

Vankaya Pakodi Kura is a traditional Andhra dish made with brinjal and deep fried besan fritters often served during wedding or other special occasions. My recipe is slightly contrary to the original recipe, as the original calls for deep frying brinjal pieces.  Its upto you, either deep fry or saute… whichever you choose the final dish will still look good and taste great.

Brinjal Chops (Bhai’s Style)

Brinjal Chops is just another fancy name for  " Stuffed Brinjal curry /Ennai kathrikkai", this recipe has been already shared by me but this version is slightly different and its close to the one served with biryani by catering agencies. My recipe shared here is something which I learned from a Muslim bhai who caters biryani for special occasion's and its typical tamizh Muslim style. They prepare these with black sesame seeds, never add any garam masala and brinjal's don't get be stuffed, instead they are chopped lengthwise and literally float in sesame oil.
