    I tried this last night.. I am not sure what I goofed up.. But the center of the cake was bit thin (my flour was even) and could not cut to pieces, it was all crumbled up and few places had been hardened & was dark brown.

    Obviously couldnot match what was in the picture nor what could be a carrot cake .. Scared to try again.

      hi jlakshmi,

      this was the exact recipe i tried & exact quantity i used. i think the problem might be in the type of cake tin u used. while baking few cakes, the corners will be hardned. but thats not a major problem. thin in the fact what do u mean lakshmi? is it not baked ?the picture was taken by me. carrot cake versions differ lakshmi. but,this is a carrot cake. anyway,even though u dont like it, thanks for ur comment.

      if u r not going to use eggs then u have 2 options,

      1.  1 egg=1 medium banana

      2.   1 egg=1 full tsp of cornstarch diluted with 3 tsp of water.

      but however along with these dont forget to add 1.5 tsp of baking soda. adding banana will be little crumbly , but the taste will be good.

    Hi Sivamahesh,
    Nice carrot cake recipe and nice presentation too. When i make this cake i used to add 4 eggs and i’ll add a pinch of baking soda and nutmeg powder. So i don’t make this cake often since its very rich. Very glad to know that i can make this cake with 2 eggs. Next time i’ll try yours and let you know how it turned out for me.. VIJI
