WARNING: This stuff is HIGHLY addictive- do not curse me!
|Puff corn||1 bag (8 ounce) or 1/2 pound|
|Unsalted Butter||2 sticks (or 1 cup)|
|Brown Sugar||1 cup|
|Honey or Light Corn Syrup||1/2 cup|
|Baking Soda||1 teaspoon|
Preheat oven to 250F. Place the puff corn into a large baking pan and set aside. I’ve used Bettermade brand corn pops, its made in Michigan!
In a big deep sauce pan, bring the butter, brown sugar and corn syrup to a boil. Make sure your sauce pan is deep enough as the batter may over flow when you add baking soda.
When the butter mixture starts to boil, add the baking soda.
This will cause the caramel mixture to foam up. Stir well and remove from heat.
Pour this caramel over the puff corn and stir until evenly coated.
Bake for about 45 minutes, stirring every 15 minutes.
Once done, remove form oven and transfer the caramel puffs onto a wax paper. Spread it out in one single layer and allow to cool.
You can store this in airtight containers on the counter for a week, without losing any quality of taste. Maybe a little longer, but only if there’s something left!
