2 cups maida
1 1/2 cups sugar
1/2 cup butter OR veg Oil OR Ghee
1 teaspoon soda bicarbonate
1 teaspoon baking powder
1/4 teaspoon salt
1/4 teaspoon fresh lime/lemon juice
1/4 teaspoon vanilla essence (or any other essence)
milk (if required)
1. In a mixing bowl add the butter, sugar and salt and mix well till all the sugar dissolves.2. Then add the eggs, lemon jiuce and mix well again.3. Then add maida, baking powder & soda – a little at a time and mix well so that no lumps are formed.4. If you see that the mixture is too thick – add some milk (about 1/8 cup)5. Grease a cake pan – I use a square pan (its about 10X10 inches & 2 inches in depth). Add the cake mixture to it.6. Bake in a pre heated oven for 45 to 60 minutes @ 325 degrees F.7. You can check if the cake is done by inserting a knitting needle OR a knife in the center of the cake. If it comes out clean, the cake is done.
Well you can add bananas & apples to this cake too. Just do not add essense in that case. You can add some cinnamon powder. And yes sugar should be reduced to 1 cup.
